A few interesting facts about lingcod you may not know:
- Lingcod are not cod. Rather, they are the largest fish in the greenling family, characterized by their small scales, long dorsal fins, and strong jaw teeth.
- Lingcod aren’t particularly hard to catch. In fact, they’ve been known to be reeled in without being hooked, stubbornly refusing to let go of the smaller hooked fish they’ve clamped between their jaws!
- Lingcod are not attractive fish. With wide jaws lined by 18 sharp teeth and something of a beer belly, they’re as strange looking as they are great tasting.
When it comes to the flavour, there is a growing legion of anglers and foodies who choose lingcod specifically for its flavour and texture. Often described as “delightful”, it flakes nicely and can be prepared to taste like lobster, if done right. Many prefer lingcod to other popular species of fish.
